I hope you’re all having a great summer enjoying time with your kids, family, and friends, and taking a break from you normal routines. With our move, I haven’t had much time to relax, but things are slowing down a bit now and I’m trying to enjoy the warm weather while it lasts.
Bacon Wrapped Chicken – This is one of my favorite chicken recipes because it’s easy and delicious. I really prefer to brine the chicken first. It’s an extra step and you have to plan ahead, but it’s easy to do. I brine chicken breasts for about 30 minutes.
Hamburgers with Homemade Buns – I like these buns so much better than the gluten-free buns you can purchase. They’re soft and not dry, and I like to make them so they’re not super fat. These are also great for sandwiches, and they freeze well.
Shrimp Salad – I love cold salads like this one during the summer.
Slow Cooker Citrus Cinnamon Chicken – This is a flavorful crock pot chicken dish.
Skillet Beef and Zoodles – I love this easy skillet meal for the summer.
Spaghetti with Meatballs – This recipe calls for baking the meatballs, but if it’s too hot to turn on your oven, just cook them in a skillet.
Broccoli Slaw – I love raw veggies salads, and this one uses pre-made broccoli slaw.
Zucchini Mashed Potatoes – If you have trouble getting kids to eat their veggies, try this recipe which mixes some zucchini into mashed potatoes.
