This week’s gluten-free meal plan has plenty of easy dinner ideas. In our house, dinner doesn’t have to be fancy, it just has to taste good, and these recipes do! One key to good flavor is using seasoning. In the summer I like to use fresh herbs, but dry herbs work too. Try different ones and mix it up each night. I use my Flavor Bible if I’m not sure which herbs to pair with a food.
Main Dish Ideas
Grilled Kabobs are easy and fun. They’re a great way to get kids involved in the kitchen, and they’re easy to mix up what goes on the kabobs and to personalize them.
This Green Bean Scramble is a great way to use fresh green beans, and it’s an easy stovetop meal.
Slow Cooker Whole Chicken is SO EASY to make. If you don’t have time to chop vegetables, just put the chicken in the crock with a little water, sprinkle with salt and pepper, and turn it on.
If you cook a large chicken and have leftovers, they’re perfect for using in these Easy Chicken Enchiladas.
These Pork Chops are also slow cooked and couldn’t be easier!
Zucchini Pizza is a tasty way to use zucchini and cut down on carbs.
Vegetable Ideas
I simply love this Chopped Veggie Salad. Use what vegetables you like and have on hand.
Add fresh, cooked beats to this Arugula Salad for a great side dish.
Breakfast Ideas
Potato Latkes are kind of like hash browns but in pancake form. They’re great served with applesauce and breakfast sausage.
Smoothies are great any time of day, in my opinion. They’re a grain-free breakfast idea, and if you add protein powder, you can have a complete meal in a glass.
Dessert Ideas
No-Bake Cookies are an old favorite of mine. Use peanut butter or other nut butter, and be sure to use gluten-free oats. Your family will love these quick and easy cookies.
These Peach Basil Pops are a delicious cold treat for a hot summer day.
