This week’s gluten-free meal plan has lots of delicious recipes that are perfect for hot weather including grilled kabobs, slow cooker, and skillet meals. And classic no-bake cookies as well as the peach basil pops are perfect summer treats!
The weather has been really hot and humid here in Maryland. I know many people love the summer, but it’s my least favorite time of year. Our new house is on seven acres with lots of trees and shade. So it’s bearable when I walk my dogs, but I’m looking forward to cooler weather when I’ll really enjoy our walks.

Grilled Sausage Kabobs – Kabobs are a lot of fun, and these are so good with a honey mustard sauce which is brushed on towards the end of cooking.
Green Bean Scramble – This is a simple and easy stovetop meal that is great for using fresh green beans.
Slow Cooker Chicken and Vegetables – It’s so easy to cook a whole chicken in a slow cooker. I like to set mine outside on a covered porch during really hot days. Try to buy a chicken that’s large enough to have leftovers but small enough to fit your crock.
Easy Chicken Enchiladas – Use leftover chicken from the previous recipe for this easy Mexican dish. If you can’t find gluten-free enchilada sauce (be sure to read the label) you can always make your own.
Slow Cooker Pork Chops – I love how tender pork chops turn out in the slow cooker, and this recipe is so easy! I buy a large package and have some leftover. You could also add cut potatoes to the bottom of your crock.
Zucchini Crust Pizza – Not only is this a great way to use fresh summer zucchini, but it’s a low carb alternative to traditional gluten-free pizza.
Chopped Veggie Salad – I love using kohlrabi in this salad, but it’s great with a variety of seasonal veggies. Use what you have.
Arugula Salad – I don’t know about you, but we eat lots of salad. This one is topped with hard cooked egg and beets.
Potato Latkes – These potato pancakes are great with applesauce on top!
Beet Smoothie – I love the color and flavors in this smoothie.
Peach Basil Pops – I love the flavor combination in these frozen treats. They’re perfect for summer!
