This week’s gluten-free meal plan has lots of delicious family-friendly summer recipes. Don’t miss the classic no-bake cookies as well as the peach basil pops. Both are perfect summer treats!

Slow Cooker Chicken and Vegetables – It’s so easy to cook a whole chicken in a slow cooker. Try to buy a chicken that’s large enough to have leftovers but small enough to fit your crock.
Easy Chicken Enchiladas – Use leftover chicken from the previous recipe for this easy Mexican dish. If you can’t find gluten-free enchilada sauce (be sure to read the label), you can always make your own.
Slow Cooker Pork Chops – I love how tender pork chops turn out in the slow cooker, and this recipe is so easy! You could also add cut potatoes to the bottom of your crock.
Zucchini Crust Pizza – Not only is this a great way to use fresh summer zucchini, but it’s a low carb alternative to traditional gluten-free pizza.
Chopped Veggie Salad – I love using kohlrabi in this salad, but it’s great with any combination of fresh veggies.
Arugula Salad – This yummy salad is topped with avocado, hard cooked egg, and beets.
Potato Latkes – These potato pancakes are great with applesauce on top!
Beet Smoothie – I love the color and flavors in this smoothie. I prefer the taste of raw beets to cooked, so I find that a smoothie is a perfect way to eat them.
Peach Basil Pops – I love the flavor combination in these frozen treats. They’re perfect for summer!
