This week’s gluten-free meal plan includes plenty of delicious family-friendly summer recipes for dinner, breakfast, and dessert. The classic no-bake cookies as well as the peach basil pops are both perfect summertime treats!
Grilled Sausage Kabobs – This is a very simple and tasty recipe. Grilling give such fabulous flavor to foods, and additional flavor is added in this recipe with a honey mustard sauce, which is brushed on towards the end of cooking.
Green Bean Scramble – Green beans, onion, and garlic are combined with ground beef, eggs, and seasoning, in this easy stove top meal that is great for using fresh green beans.
Slow Cooker Chicken and Vegetables – It’s so easy to cook a whole chicken in a slow cooker. I try to buy a chicken that’s large enough to have leftovers but small enough to fit my crock. You can use other vegetables (green beans and potatoes are great options). Or, if you don’t have time to cut the veggies, just put the chicken in without them and cook your veggies later.
Easy Chicken Enchiladas – Use leftover chicken from the previous recipe for this easy Mexican dish. If you can’t find gluten-free enchilada sauce (be sure to read the label), you can always make your own.
Slow Cooker Pork Chops – With only six simple ingredients, this recipe is so easy and results in tender pork chops! You can also add cut potatoes to the bottom of your crock.
Zucchini Crust Pizza – Not only is this a great way to use fresh summer zucchini, but it’s a low carb alternative to traditional gluten-free pizza.
Chopped Veggie Salad – I love using kohlrabi (which tastes a lot like broccoli stem) in this salad, but it’s great with any combination of fresh veggies.
Arugula Salad – This yummy salad is topped with avocado, hard cooked egg, and beets.
Potato Latkes – These potato pancakes are great with applesauce on top!
Beet Smoothie – I love the color and flavors in this smoothie. I prefer the taste of raw beets to cooked, so I find that a smoothie is a perfect way to eat them.
Peach Basil Pops – I love the flavor combination in these frozen treats. They’re perfect for summer!
