This week’s gluten-free meal plan includes delicious slow cooker and stove top recipes to help you avoid turning on the oven on hot summer days. You can even put your slow cooker outside to keep the heat out of the kitchen. But one recipe that’s worth baking is the blueberry cobbler!

Main Dish
Slow Cooker Italian Chicken with Potatoes – This recipe uses Italian seasoning and salad dressing as an easy way to add flavor.
Turkey Meatballs in White Sauce – Using turkey instead of beef and a dairy-free white sauce instead of a tomato based sauce makes this a nice change from traditional meatballs and sauce. It’s one of my husband’s favorite meals.
Hummus Crusted Chicken – This is a super easy and tasty way to prepare moist chicken on the stove.
Slow Cooker Ground Beef Stew – In the summer, I add just enough water to help the food cook but not enough to make it soupy. It’s great served over rice, or you can add potato chunks to it. Keep in mind that the zucchini should be added only during the last hour or so of cooking.
Brown Rice Salad with Ham – This can be eaten warm or cold. It’s great to make ahead and have for a picnic or easy summertime dinner.
Biscuit Crust Pizza – This is a quicker way to make homemade pizza that doesn’t require rise time.
Side Dishes
Carrot, Beet, and Apple Salad – Even people who don’t like beets like this salad. The carrot and apple (or pear) and other ingredients add so much flavor that the beet flavor does not stand out.
Grilled Zucchini – I love fresh summer zucchini, and grilling it is a great option.
Breakfast
Pancakes – Pancakes are fun breakfast food. These are delicious and great for a lazy morning.
Zucchnini Quiche Muffins – Here’s another great way to use zucchini for a low-carb breakfast.
Dessert
Blueberry Cobbler – I honestly prefer my berries fresh, but once in a while I’ll cook with them, and this recipe really is delicious.
Chocolate Coconut Candy – This is a really yummy treat that doesn’t require baking.
