This week’s gluten-free meal plan includes delicious summertime recipes that everyone will enjoy. My husband particularly loves the turkey meatballs, and the ham salad is a great fix-ahead and take-along meal. The pancakes are a perfect weekend treat, and you do not want to miss the blueberry cobbler!
I hope everyone had an enjoyable Independence Day! My birthday was this week, but unfortunately I’ve been suffering for several days from the effects of gluten after eating out on my birthday. Our favorite restaurant was closed that day for their company picnic, so we had to go elsewhere. And that’s one reason why I just don’t eat out very often.
Slow Cooker Italian Chicken with Potatoes – This super easy recipe only requires four ingredients. It uses Italian seasoning and Italian salad dressing as an easy way to add flavor.
Turkey Meatballs in White Sauce – The flavorful meatballs use turkey instead of beef and are served in a dairy-free white sauce instead of a tomato based sauce, making it a nice change from traditional meatballs and pasta sauce. I like serving it over rice.
Hummus Crusted Chicken – This is a super easy and tasty way to prepare moist chicken on the stove.
Slow Cooker Ground Beef Stew – In the summer, I add just enough water to help the food cook but not enough to make it soupy. It’s great served over rice, or you can add potato chunks.. Keep in mind that the zucchini should be added only during the last hour or two of cooking (depending on how hot your crock cooks).
Brown Rice Salad with Ham – This salad can be eaten warm or cold. It’s great to make ahead and take on a picnic or dinner at the pool. It’s an easy and tasty summertime dinner.
Biscuit Crust Pizza – This is a quicker way to make homemade pizza that doesn’t require rise time. The biscuit crust does well in small rounds, making it perfect for personal pizzas that everyone can add their favorite toppings to.
Carrot, Beet, and Apple Salad – Even people who don’t like beets like this salad. The carrot and pear (or apple) and other ingredients add so much flavor that the beet flavor does not stand out. Also, I think the beet flavor is stronger when cooked. I prefer the more mild flavor of raw beets. They’re also great in smoothies!
Grilled Zucchini – I love fresh summer zucchini, and grilling it is a great option. You’ll want to use a grilling basket or mat with vegetables like this that are cut small enough to slip through the grates of the grill.
Pancakes – Pancakes are such fun breakfast food. These are made with sorghum and millet flours and potato starch. They are delicious and great for a lazy morning.
Zucchnini Quiche Muffins – With eggs, tomato, bacon, and almond flour, this is another great way to use zucchini. These muffins are a delicious low-carb breakfast option.
Blueberry Cobbler – I love fresh berries, but frozen blueberries are terrific for cooking and baking. This cobbler recipe is absolutely delicious! Be sure to use a safe brand of gluten-free oats, such as GF Harvest.
Chocolate Coconut Candy – With only a few ingredients, this is a really yummy treat that doesn’t require baking.
