You’ll find many delicious recipes in this week’s gluten-free meal plan. In particular, the Mexican beef bowls, potato chowder, chicken Parmesan, and Mexican chili have always gotten rave reviews. And you can’t go wrong with the chocolate desserts!

Main Dish
Slow Cooker Mexican Beef Bowls – This recipe is always a hit and can be individualized for dairy-free and grain-free eaters.
Potato Chowder with Sausage – My family has always loved this soup, and it’s great made with a milk substitute.
Chicken Parmesan – The coating on the chicken keeps it nice and moist. Since I am dairy free, I simply leave a piece without cheese on top.
Slow Cooker Mexican Chili – This is one of my go-to recipes that friends and family always love. Serve it with tortilla chips or corn bread or over rice.
Chicken and Bacon Stir Fry – With chicken, bacon, broccoli, and tomatoes, this is an easy and delicious stove top meal.
Biscuit Crust Pizza – If you don’t want to make this from scratch, try a gluten-free flour mix. It’s a great way to have homemade pizza.
Side Dishes
Zucchini with Onions – I love the flavors in this tasty vegetable dish.
Drop Biscuits – This is an easy bread recipe to accompany soup or another meal. The biscuits are nice and soft!
Breakfast
Baked Oatmeal – You can put this together the night before and bake it in the morning.
Paleo Applesauce Muffins – Muffins are great for breakfast and snacking. I like that these paleo muffins are not super high in carbs.
Dessert
Peanut Butter Cups – You can’t beat the classic combination of chocolate and peanut butter (or other nut butter) in these homemade treats. They’re great for Valentine’s Day!
Cherry Chocolate Black Bean Brownie Bites – These are grain-free and delicious!
