This week’s gluten-free meal plan is loaded with delicious recipes, including several to keep in mind for serving to company. I have always gotten rave reviews from the Mexican beef bowls, potato chowder, chicken Parmesan, and Mexican chili.
And if you still need ideas for the Super Bowl tomorrow evening, be sure to check out my Game Day Recipes.
Slow Cooker Mexican Beef Bowls – This meal can be individualized – skip the rice if you’re grain free (or low carb) and add the toppings you desire.
Potato Chowder with Sausage – My family has always loved this soup, and now my parents love it too. And it’s great made with a milk substitute.
Chicken Parmesan – The coating on the chicken keeps it nice and moist in this recipe. I’ve made it for friends who really enjoy it. I simply leave a piece without cheese on top for me.
Chicken and Bacon Stir Fry – With chicken, bacon, broccoli, and tomatoes, this is an easy and delicious stove top meal.
Biscuit Crust Pizza – If you don’t want to make this from scratch, try a gluten-free flour mix. It’s a great way to have homemade pizza.
Zucchini with Onions is one of my favorite vegetable dishes.
Drop Biscuits – This is an easy bread recipe to accompany soup or another meal. The biscuits are nice and soft!
Baked Oatmeal – You can put this together the night before and bake it in the morning.
Paleo Applesauce Muffins – Muffins are great for breakfast and snacking. I like that these paleo muffins are not super high in carbs.
If you’re thinking ahead to Valentine’s Day, these desserts are ideal!
Peanut Butter Cups – You can’t beat the classic combination of chocolate and peanut butter in these homemade treats.
Cherry Chocolate Black Bean Brownie Bites – These are grain-free and delicious!
