Happy New Year! This week’s gluten-free meal plan includes some flavorful main dish recipes such as chicken scampi and taco rice. Plus, you’ll find delicious side dish, breakfast, and dessert ideas.

Main Dish
Chicken Scampi – Garlic, onions, and peppers make this a flavorful chicken recipe.
Beef and Pepperoni Soup – I always miss making soups during the warm months. This one is flavorful. low-carb, and perfect for a cold night.
Taco Rice – This is an easy, kid-friendly weeknight meal that adults enjoy too!
Slow Cooker Pineapple Cinnamon Chicken – I use bone-in chicken thighs for this recipe but you could use other chicken pieces as well. If you’re not fond of cinnamon in savory dishes, try using ginger or garlic.
Fish Cakes – Use a white fish of our choice in this recipe that includes chick peas.
Biscuit Crust Pizza – This is a quick pizza crust that doesn’t require rise time. It’s great for making individual pizzas.

Bread Sticks – These are a special treat that goes great with soup.
Butternut Squash Soup – I like adding sweet potato and apple to my squash soup for great flavor.
Zucchini with Walnuts – This is one of our favorite ways to eat zucchini!
