As is typical in Maryland, we’ve been getting a mix of really cold weather and very mild weather. We had our first snow last week, but it wasn’t much. This week we’re getting ice instead. But whatever the weather, life goes on and we have to come up with meals to eat each day.
This gluten-free meal plan includes some easy and tasty dinner ideas along with bread balls we love, a healthy breakfast idea, and delicious chocolate chip cookies!
Main Dish
Easy Beef Enchiladas – Be sure to use gluten-free enchilada sauce or make your own for this easy meal.
Slow Cooker Chicken and Vegetables – This is one of our regular meals. Cook a chicken large enough to have leftovers (as long as it fits in your crock pot).
Chicken and Broccoli Chowder – One of our favorite soups, and it’s easy to make with leftover chicken.
Slow Cooker Mexican Quinoa and Beef – This tasty recipe uses the slow cooker but don’t over cook it. 2 -3 hours might be enough.
Lentils with Bacon and Mashed Potatoes – This meal is not low carb, but it is delicious!
Cheeseburger Rice is an easy meal that I depend on regularly. It’s especially easy if you have a rice cooker or Instant Pot to cook the rice.
Sides
Bread Balls – These are dairy free. My family loves them.
Quinoa Pilaf is a nice side dish. You can cook the quinoa in chicken broth for extra flavor.
Green Beans Almandine is an easy way to dress up green beans.
Breakfast
Orange Coffee Cake – This homemade coffee cake is great for breakfast or a coffee break.
Zucchini Pancakes – Made with zucchini, almond flour, eggs, and seasoning, they’re a healthy breakfast option.
Dessert
Chocolate Chip Cookies – You can’t go wrong with these!
Chocolate Cranberry Pecan Clusters – Feel free to mix up the nuts and dried fruit. This is a very easy treat to make that everyone enjoys.
