This week’s gluten-free meal plan provides recipes for easy and tasty dinner ideas. The Mexican Beef and Quinoa, Chicken and Broccoli Chowder, and Cheeseburger Rice are favorites with my family. You’ll also find some bread balls we love, a healthy breakfast idea, chocolate chip cookies, and more!
Slow Cooker Chicken and Vegetables – This is one of our regular meals. Cook a chicken large enough to have leftovers (as long as it fits in your crock pot).
Chicken and Broccoli Chowder – One of our favorite soups, and it’s easy to make with leftover chicken. It’s great made with dairy-free milk, too.
Slow Cooker Mexican Quinoa and Beef – This tasty recipe uses the slow cooker but don’t over cook it. 2 -3 hours might be enough.
Lentils with Bacon and Mashed Potatoes – This meal delicious meal comes from my sister-in-law.
Cheeseburger Rice is an easy meal that I depend on regularly. It’s especially easy if you have a rice cooker or Instant Pot to cook the rice.
Bread Balls – These are dairy free and my family loves them.
Quinoa Pilaf is a nice side dish. You can cook the quinoa in chicken broth for extra flavor.
Green Beans Almandine is an easy way to dress up green beans.
Orange Coffee Cake – This homemade coffee cake is great for breakfast or a coffee break.
Zucchini Pancakes – Made with zucchini, almond flour, eggs, and seasoning, they’re a healthy breakfast option.
Chocolate Chip Cookies – You can’t go wrong with these!
Chocolate Cranberry Pecan Clusters – Feel free to mix up the nuts and dried fruit. This is a very easy treat to make that everyone enjoys. You can also spread the mixture into a pan lined with parchment or wax paper, let it cool, and then break it into pieces.
