This weekend I’m visiting with my parents and happy to make some delicious meals for them. I planned ahead considering how I could turn dinner leftovers into a different meal for lunch the next day. I also planned to have leftovers they could eat after I’m gone. The point is that sometimes it takes unusual circumstances for me to plan really well, but when I do, I realize how worthwhile it is.
This gluten-free meal plan is a great place for you to start, but I encourage you to think about your particular schedule, and plan accordingly. Think about what you will eat for all your meals, how you will use leftovers, when you might eat out, what food you can double up on and freeze, etc.
There are some great warm and comforting foods in this week’s plan. My family really loves the potato chowder, and it’s just as good made with a milk substitute. The chili and corn bread are always a hit too.
