This week’s gluten-free meal plan includes my favorite soup, a couple of easy stove top meals, homemade pizza, and more! Having a plan for meals, especially dinner, can make life so much easier. For a number of years I preferred not to use a meal plan, but at this stage of life when I’m cooking or my husband and my parents, I find planning invaluable.
Salmon Chowder – This is probably my favorite soup, and my mom loves it too. It uses coconut milk, so it’s dairy free.
Ground Beef Goulash – An easy stove top weeknight meal.
Chicken in Cranberry Cream Sauce – With only a few ingredients, this dairy free recipe is easy to make. Serve it over rice.
Slow Cooker Beef Stew – My husband and dad always enjoy this classic dish as long as I trim the meat well. 🙂
Spanish Rice with Sausage is another great stove top weeknight meal.
Pizza – This homemade thick crust is delicious. My family loves it.
Mashed Cauliflower makes a great low-carb side dish.
Broccoli Carrot Salad – A great way to eat more veggies!
Grain-Free Sun Dried Tomato and Olive Bread – This is a tasty, low-carb bread.
Overnight Oats – Put it together the night before and in the morning it’s ready to go with no cooking!
Paleo Apple Coffee Cake – Moist and delicious, this coffee cake is great for breakfast or snacking.
Oatmeal Chocolate Chip Cookies – I love oatmeal in cookies, and these are so good!
Fruit Salad – I adore this fruit salad with apples, pears, dates, and dried cherries.
