Valentine’s day is this week, and if you’re not going out for dinner, you might enjoy the sticky sesame salmon. You’ll also find a couple of chocolate desserts that would be great for the special day. My husband and I enjoy going to a small Irish restaurant with a nice fireplace and good wine. However, we often go on a day other than Valentine’s day so it won’t be crowded.
Main Dish
Slow Cooker Chicken & Vegetables is a super easy and delicious meal. I like to use a chicken large enough to have leftovers (but it has to fit in the crock pot).
Chicken Pot Pie – I use leftover chicken for this recipe. My family loves the biscuit topping.
Sticky Sesame Salmon – This would make a great Valentine’s Day dinner.
Slow Cooker Meatloaf & Potatoes – With the potatoes on the bottom of the crock they get flavored with the beef making a delicious meal.
Italian Sausage with Quinoa and Broccoli – This is an easy stove top meal for a busy weeknight.
Taco Rice is another easy and delicious meal. If you set a rice cooker to have the rice done when you need it, you can put this meal together in minutes.
Sides
Ratatouille is one of my favorite vegetable dishes, and it’s delicious leftover too. I’m not a big fan of eggplant, but I like it in this recipe.
Paleo Bread – I rarely eat bread, but once in a while it’s nice to have, and this paleo version makes it lower in carbs.
Breakfast
Multi-Grain Waffles make a great weekend breakfast or as breakfast for dinner. You can make extra and freeze for busy mornings.
Almond Flour Pancakes are filling and satisfying.
Dessert
Chocolate Cake – This cake is moist and delicious. It’s great for birthdays or any day.
Chocolate Coconut Candy is easy to make and it’s a healthier treat.
