I hope you all had a wonderful Thanksgiving last week. We enjoyed several days with my extended family and ate lots of delicious food! My granddaughter (now 9 months old) was the star of the show, and she really enjoyed being with everyone.
This week’s gluten-free meal plan includes slow cooker meals, our favorite Mexican casserole, and homemade pizza that everyone will enjoy. There are also cookie recipes to get you started with holiday baking.
Main Dish
Slow Cooker Chicken and Mushroom Soup calls for cooked chicken, but I’m sure turkey would work too. 🙂 Mushroom lovers will enjoy this soup.
Mexican Casserole with Corn Bread – This casserole combines beef with taco seasoning, onion, beans, and cheese (optional) and is topped with homemade cornbread batter which bakes with the casserole. It’s one of our favorites.
Chicken Kiev – Breading chicken always helps to keep it nice and moist. This is no exception. If you’re dairy free, try your favorite butter substitute in this recipe.
Slow Cooker Sloppy Joes uses 3 pounds of ground beef. If you have plenty of leftovers, freeze it for another meal. The meat is great served on homemade hamburger buns.
Tilapia with Tomatoes is one of my favorite simple fish recipes. It’s hard to find tilapia that’s worth eating so feel free to substitute another light fish.
Homemade Pizza is always delicious. This recipe makes a singe round pizza. If you need more to feed your family, try my large recipe (which I actually like even better).
Sides
Mashed Cauliflower is a great low-carb side dish that can replace mashed potatoes.
Cranberry Squash is a nice seasonal side dish that will add color to your plate.
Breakfast
Buckwheat Pancakes make a nice breakfast treat. Better yet, have them for dinner!
Paleo Pumpkin Muffins are delicious and filling. I love the flavors of pumpkin and spice and that they are lower carb than most muffins.
Dessert
Thumbprint Cookies are one of my favorite Christmas cookies.
Grain-Free Gingerbread Men – I absolutely love the flavor and texture of these cookies!
