I hope you all are having a great August and enjoying the summer. I’m still occupied with getting our new house in order and getting ready for my parents to live with us. We’re enjoying the new house, though, and the property.
Now that my dogs know the area, they’re allowed to run free when we go for walks. Actually, I go for a walk, and they go for a run. Esca in particular likes to run off into the woods or a field but he always circles around and comes back. A tired dog is a happy dog!

Tacos with Homemade Guacamole – Tacos with corn based shells are an easy weeknight dinner. Since I generally don’t eat corn, I like to make a taco salad. Homemade guacamole is easy to make and goes great with any Mexican meal.
Mexican Quinoa and Beef – This is a delicious slow cooker recipe, but you need to be careful about the timing. You don’t want the quinoa to dry out.
Fried Cabbage with Sausage – This is another easy skillet meal that is a tasty way to use fresh cabbage.
