My broken hip has put a real wrench in my summer, but I’m slowly recovering. How quickly we can lose muscle and how hard it is to build it back up! I’m walking with a cane and driving, but I use the motorized carts in the stores. And, we bought a used golf cart so I can still get around outside on our property and take my dog out for walks. I hope you are having a great summer! It will be over before we know it.
Lemon and Dill Chicken Breasts – I love this easy and flavorful skillet recipe.
Tacos with Homemade Guacamole – Tacos with corn based shells are an easy weeknight dinner. Since I generally don’t eat corn, I like to make a taco salad. Homemade guacamole is easy to make and goes great with any Mexican meal.
Mexican Quinoa and Beef – This is a delicious slow cooker recipe, but you need to be careful about the timing. You don’t want the quinoa to dry out.

Coleslaw – Usually, I ‘m not a big fan of coleslaw, but it love it when it’s fresh and homemade.
