I hope you all enjoyed the eclipse. The sun was about 80% eclipsed here, and it was pretty cool. Instead of our usual hot and humid August weather, we are having a taste of fall here this weekend, and I’m enjoying it with some of my favorite gluten-free bloggers! I’m also sharing with them one of my favorite wines which is perfectly appropriate for this week – Radius Eclipse!
Main Dish
Slow Cooker Pizza Casserole – This an alternative to my oven baked pizza casserole if you don’t want to turn on your oven. Either way, it’s delicious!
Chicken and Broccoli Stir Fry – Stir fry is a delicious and healthy stove top meal that’s always a hit with my family and friends.
Zucchini Scramble – Although this recipe calls for coating the zucchini with gluten-free flour, I’ve made it without flour, It’s just as good and makes a great low-carb meal.
Slow Cooker Mexican Beef Bowls – I recently made this when some family was over for dinner, and everyone really enjoyed it. I like that it can be personalized with toppings or the rice can be omitted.
Italian Sausage with Quinoa and Broccoli – This is another easy, tasty, one-dish meal that my family always enjoys.
Cheeseburger Fries – If your kids like to have a fun Friday night dinner (or any night), this one is easy and always a winner.

Chopped Veggie Salad – With a simple homemade dressing, this salad is fresh and delicious and can be varied to use what veggies you have.
