There was a time when I didn’t create a meal plan on a regular basis, and that worked really well for me in that season of life. But now that I am caring for my parents, I’m back to creating a weekly menu plan, and it helps so much! I hope the weekly plans I post here are helpful to you. Even if you don’t follow them exactly, they can give you ideas and inspiration.
Ground Beef and Broccoli with Mushrooms – I love the combination of beef and broccoli, and this skillet meal is flavored with fresh ginger.
Mango Salsa Chicken – This mango salsa is a fun way to dress up grilled chicken.
Chicken and Bacon Stir Fry – This isn’t a classic stir fry, but it’s a super easy and tasty dinner.
Slow Cooker Pot Roast and Vegetables – I know I need a better picture of this, but it’s one of my favorite dishes to make. It’s super easy, the meat turns out tender, and you can use just about any vegetable you want.
Sticky Sesame Salmon – This delicious recipe from Sylvana Nardone is a great way to enjoy seafood.
Taco Rice – This make a gun and easy Friday night dinner.
Mashed Cauliflower – If you’re watching your carbs or just looking for more ways to enjoy vegetables, this mashed cauliflower is a great option.
Zucchini with Onions – This is one of my favorite ways to enjoy summer squash.
Belgian Waffles – These waffles are the big ones made in a Belgian waffle maker, but the batter will work for regular waffles too.
Applesauce Muffins – I make these muffins on a weekly basis, and my dad especially loves them. I have made a couple of changes. I substitute 1/2 cup tapioca flour for 1/2 cup almond flour, which makes them a bit lighter. I also stir in a handful of mini chocolate chips!
Cherry Chocolate Cupcakes – With the delicious combination of chocolate and cherry, these cupcakes are sure to be a huge hit!
Chocolate Banana Ice Cream Sandwich – Black beans are used to make these cookies grain free. And the ice cream is dairy free and made with bananas.
