Chicken and Bacon Stir Fry – This isn’t a classic stir fry, but it’s a super easy and tasty dinner.
Slow Cooker Pot Roast and Vegetables – I make some version of this recipe on a regular basis. I often use frozen green beans in place of the vegetables shown here. My dad loves the flavor of beans when they are cooked along with beef.
Sticky Sesame Salmon – This delicious recipe from Sylvana Nardone is a great way to enjoy salmon.
Taco Rice – This makes an easy and dinner that kids and adults enjoy.

Mashed Cauliflower – If you’re watching your carbs or just looking for more ways to enjoy vegetables, this mashed cauliflower is a great option.
Zucchini with Onions – This is one of my favorite ways to enjoy zucchini. It’s also great with yellow squash.
Breakfast
Belgian Waffles – These waffles are the big ones made in a Belgian waffle maker, but the batter will work for regular waffles too.
Applesauce Muffins – My dad especially loves these muffins, especially when I stir in a handful of mini chocolate chips!
Dessert
Cherry Chocolate Cupcakes – With the delicious combination of chocolate and cherry, these cupcakes are sure to be a huge hit!
Chocolate Banana Ice Cream Sandwich – Black beans are used to make these cookies grain free. The ice cream is dairy free and made with bananas.
