I’ve brought back a couple of older recipes this week (hence the not-so-great photos), but this week’s meal plan has some easy summertime ideas that won’t heat up the kitchen.
Main Dish Ideas
Slow Cooker Chicken and Vegetables is such an easy meal that I make it regularly. You can keep the heat out of the kitchen too. See my tips for using your slow cooker in the summer.
This warm Chicken and Potato Salad is a simple summer meal that you can add ingredients to or use your dressing of choice.
Ground Beef Goulash is similar to spaghetti but slightly different. It’s an easy weeknight meal.
The slow cooker is a great way to cook Meatloaf and Potatoes making it an easy meal. You could even prepare the meatloaf ingredients ahead of time and have it ready to go into the crock pot.
This Spanish Rice with Sausage is a super easy, flavorful weeknight meal.
Corn Bread Pizza is a fun variation on traditional pizza. Corn bread is easy to whip up and doesn’t require rise time like a yeast crust does.

I’m not a big fan of kale expect in the form of Kale Chips – and I can eat a ton of those!
In the summer I like to mix up the way I cook zucchini and this Zucchini with Walnuts is a great one.
Bread Sticks add a fun touch to any meal.
Breakfast Ideas

Dessert Ideas
Chocolate Cake is great for so many occasions or simply an everyday treat. This one does not disappoint.
Chia Almond Pudding Parfaits are a great cold treat that is free of dairy and refined sugar.
