Main Dish
Slow Cooker Chicken and Vegetables – This meal is so easy to make that’s it’s a regular on my menu plan. You can swap out different veggies if you like. Serve it with potatoes, rice, and/or salad.
Chicken and Broccoli Chowder is one of my top 5 favorite soups, and it can easily be made dairy free.
Spanish Rice with Sausage – Sausage adds great flavor to this easy stove top meal.
Slow Cooker Sloppy Joes – Serve with gluten-free hamburger buns. The recipe I link to below is great or you can buy some.
Italian Sausage and Pasta – This is a one pot meal that’s great for a busy weeknight.
Taco Rice is a kid-friendly and easy meal. Serve with veggies and dip, salad, or smoothie.
Sides
Mashed Cauliflower – This is a great low-carb side dish. If you can eat dairy, try adding butter and/or cheese.
Hamburger Buns – These homemade buns are great for sandwiches of all kinds and they freeze well.
Breakfast
Coconut Pineapple Muffins – These muffins use some coconut flour but they’re not completely grain free. They are delicious!
Blueberry Coconut Flour Muffins – These are grain free and paleo.
Dessert
Chocolate and Peanut Butter Easter Bunnies – Consider making these delicious homemade treats for Easter or any time. Other shapes could be used as well.
Pineapple Marble Cake – This little cake is marbled and topped with pineapple jam.
