You’ll find easy and delicious dinner ideas that the whole family will enjoy in this week’s gluten-free meal plan. One benefit of self-isolation is more time to cook. I know some ingredients are hard to come by, but I think most of these recipes are doable and economical.
Hang in there, folks. Living with my parents, who are in their upper 80s, makes me especially grateful for all the people who are staying home to help flatten the curve of coronavirus infections. We can do this!

Slow Cooker Chicken and Vegetables – This meal is so easy to make that’s it’s a regular on my menu plan. You can swap out different veggies if you like. Frozen green beans work well. Just dump them in the bottom of the crock and they will thaw and cook along with the chicken.
Chicken and Broccoli Chowder is one of my top 5 favorite soups, and it can easily be made dairy free. It’s a delicious way to use leftover chicken. I am not currently buying fresh broccoli because it’s too hard to wash, but this recipe uses frozen broccoli.
Spanish Rice with Sausage – Sausage adds great flavor to this easy stove top meal.
Slow Cooker Sloppy Joes – Serve with gluten-free hamburger buns. The recipe I link to below is great or you can buy some.
Italian Sausage and Pasta – This is tasty one-pot meal. If you don’t have gluten-free pasta, quinoa or rice would work too.
Taco Rice – This is a kid-friendly and easy meal. Serve it with veggies and dip, salad, or smoothie.
Mashed Cauliflower – This is a great low-carb side dish. If you can eat dairy, try adding butter and/or cheese.
Hamburger Buns – These homemade soft buns are great for sandwiches of all kinds and they freeze well.
Coconut Pineapple Muffins – These delicious muffins use some coconut flour, but they’re not completely grain free.
Blueberry Coconut Flour Muffins – These muffins are grain free and paleo.
Pineapple Marble Cake – This little cake is marbled and topped with pineapple jam.
Strawberry Chia Pudding – Use any kind of milk that you like in this guilt-free treat that’s sweetened with maple syrup (or try another sweetener).
