I hope everyone is doing well and enjoying spring (apart from the pollen). The goldfinches outside are turning gold again, the daffodils, forsythia bushes, and magnolia trees are blooming, and for the most part, the weather is warming up!
Slow Cooker Honey Mustard Ham – This super easy recipe uses pre-cooked boneless ham. Adding honey, mustard, cinnamon, and cloves give the ham wonderful flavor.
Skillet Lemon and Dill Chicken – We really enjoy this flavorful stove top recipe which uses boneless, skinless chicken breast. You’ll also need onion, garlic, dry white wine or chicken broth, lemon juice, and dried dill weed.
Spaghetti with Baked Meatballs – I always make a double batch of meatballs and freeze the extras (after baking). Then, the next time you make spaghetti, you’ll have meatballs already made. We like meatballs with sauce over rice pasta or spaghetti squash.
Slow Cooker Citrus Cinnamon Chicken – With only five ingredients, this slow cooker recipe is so easy to put together. You’ll need chicken thighs, ketchup, instant tapioca, orange juice, and a cinnamon stick.
Salmon Cakes – This delicious recipe uses canned salmon, so I often make it the day before I go grocery shopping (when I’m out of fresh meat). We enjoy it topped with homemade remoulade sauce or tartar sauce.
Biscuit Crust Pizza – The biscuit crust means there’s no rise time required for this pizza. You can make individual pizzas and kids will enjoy topping their own. The recipe calls for brown rice flour, but white rice flour will work as well.
Quinoa Pilaf – Quinoa, onion, zucchini, and seasoning makes this a delicious and healthy side dish.
Instant Pot Baked Beans – Beans are a great economical side dish or vegetarian main dish, especially when you start with dried beans. These have plenty of flavor.
Sausage Gravy and Biscuits – In my opinion, biscuits and gravy are real comfort food, and who can’t use a little of that?
Healthy Carrot Muffins – These grain-free, paleo muffins are made with almond and coconut flour. They’re sweetened with honey and banana, and of course, they include carrots. They’re great for breakfast or snacking.
Banana Cake – This is one of our favorite cakes because it always turns out moist. I recently made a cupcake version for my granddaughter’s birthday, and they were a big hit. The cake is yummy even without any frosting, but you can add frosting or a simple glaze.
Chocolate and Peanut Butter Bunnies – This classic combination of chocolate and peanut butter (or any nut butter) makes a great homemade Easter treat.
Chocolate Covered Coconut and Peanut Butter Eggs – This is another great homemade Easter treat that is so delicious!
