The weather has been cloudy here, and so has my brain. I don’t know about you, but I’m really tired of quarantine life! Not seeing my kids and grandkids is the hardest part. I can’t complain, though, because we still have incomes, even if not at 100%. Hang in there, folks. We can do this!

Slow Cooker Taco Meatloaf – This is an easy and flavorful way to enjoy meatloaf.
Ground Beef Goulash – If you can have dairy, then throw some cheese on top of this easy meal.
Mexican Beef Bowls – For this recipe, the beef and beans cook in the slow cooker. Then you assemble bowls with the rice and toppings.
Homemade Pizza – This is my family’s favorite pizza recipe. It makes a nice, chewy thick crust.

Carrot and Broccoli Salad with Bacon – This is a nice fresh salad with sunflower seeds, raisins, and bacon!

Onion and Red Pepper Frittata – This is a delicious egg dish that’s perfect for a low-carb breakfast. Or eat your carbs along with it – it’s great either way!
Chocolate Cake – I’m in need of some comfort food these days, and this chocolate cake really fits the bill!
Rhubarb Coffee Cake – This delicious coffee cake is moist and grain free.
