This week’s gluten-free meal plan includes several slow cooker recipes to make dinner time a breeze. You’ll find plenty of tasty and easy recipes to keep you and your family happy and healthy.
If you don’t have time to put dinner in the crock pot early in the day, try getting the ingredients ready the night before. Keep in mind that slow cooker temperatures can vary widely. Get to know how hot yours cooks, and adjust cook times accordingly. I have two slow cookers, and one definitely cooks faster than the other. Since it’s a SLOW cooker, I generally prefer the one that is not as hot.
Slow Cooker Taco Meatloaf – Salsa and taco seasoning are added to this meatloaf to give it a Mexican twist. And instead of topping it with ketchup, use additional salsa, sour cream, and/or cheese. It’s an easy recipe with plenty of flavor. I like using half beef and half turkey.
Slow Cooker Chicken and Brown Rice – If you like brown rice but not the cook time, this slow cooker recipe is a great way to go. Chicken broth and poultry seasoning give it nice flavor. And (again) brining chicken before cooking is a great way to keep it moist. Don’t let the homemade cream of chicken soup discourage you from making this recipe. The soup is super quick and easy to make.
Ground Beef Goulash – Onion, garlic, and Italian seasoning flavor this easy dish. If you can have dairy, serve it sprinkled with Parmesan cheese for even more great flavor. I’m a fan of Tinkyada pasta, but use your favorite gluten-free brand.
Mexican Beef Bowls – For this recipe, the beef and beans cook in the slow cooker. Then you assemble bowls with the rice and toppings. I use an eye round roast for this recipe, which turns out very tender.
Homemade Pizza – This is my family’s favorite pizza recipe. It makes a nice, chewy thick crust. While it does take a bit of time to make, it is very worthwhile.
Citrus Winter Salad – I know it’s spring, but this is still delicious!
Carrot and Broccoli Salad with Bacon – This is a nice fresh salad with sunflower seeds, raisins, and bacon!
Paleo Biscuits – These grain-free biscuits are a nice low-carb addition to a meal.
Chia Oatmeal Breakfast – Gluten-free oats, chia seeds, salt, and water is all it takes to make this delicious and filling hot breakfast. Vary it with add-ins such as nuts, seeds, fruit, and sweetener.
Onion and Red Pepper Frittata – This is a delicious egg dish that’s perfect for a low-carb breakfast. Or eat your carbs along with it – it’s great either way!
Chocolate Cake – This chocolate cake is moist and delicious. You really can’t go wrong with making this for a birthday or other occasion.
Rhubarb Coffee Cake – I love the flavor of rhubarb, and this delicious rhubarb coffee cake is moist and grain free.
