This week’s gluten-free meal plan has some of my family’s very favorite dinner recipes (mac & cheese, chili, and pizza casserole). And the lemon bundt cake is a perfect spring dessert!
Main Dish
Baked Macaroni and Cheese – This is my mom’s recipe for a dish that my family absolutely loves. You can serve it as a vegetarian main dish or as a hearty side dish.
Ground Beef and Broccoli – This is a sort of stir fry dish that includes mushrooms and ginger. It’s simply but tasty.
Baked Chicken Tenders – Because they are coated, these chicken tenders stay nice and moist. They’re paleo too!
Slow Cooker Mexican Chili – When I go out of town, my husband loves for me to leave a pot of this chili for him. I always get compliments from non-family too.
Tilapia with Tomatoes – Since it’s hard to find “clean” tilapia, you can substitute any light fish in this recipe.
Pizza Casserole – This is a great way to enjoy the flavors of pizza. It’s similar to a lasagna but easier to make. It’s great for serving to company.
Sides
Asparagus Soup – I love it when asparagus is in season, and this is one great way to eat it.
Bread Balls – These are dairy free and a fun addition to any meal.
Breakfast
Buckwheat Pancakes – Use pure buckwheat flour in these pancakes for a nice twist.
Almond Flour Pancakes – These pancakes are low-carb and very filling.
Dessert
Lemon Bundt Cake – We love lemon desserts, and I like that bundt cakes only require a simple glaze on top.
Coconut Almond Stuffed Dates – I really love these little treats after dinner.
