I hope everyone is hanging in there. Here in Maryland, our numbers are still going up, so we won’t be phasing out of lockdown anytime soon. I’ve been keeping busy making cloth masks for family and friends because they are now required when going to stores or using public transportation.
This week’s gluten-free meal plan has some of my family’s favorite dinner recipes – baked macaroni and cheese, Mexican chili, and pizza casserole. And the lemon bundt cake is a perfect spring dessert!
Baked Macaroni and Cheese – This is my mom’s recipe for a dish that my family absolutely loves. You can serve it as a vegetarian main dish or as a hearty side dish.
Ground Beef and Broccoli – This is a sort of stir fry dish that includes mushrooms and ginger. It’s simple but tasty.
Baked Chicken Tenders – Because they are coated, these chicken tenders stay nice and moist. They’re paleo too!
Slow Cooker Mexican Chili – This is a thick and tasty chili that my family always enjoys.
Tilapia with Tomatoes – You can substitute any light fish for the tilapia in this recipe.
Pizza Casserole – This is a great way to enjoy the flavors of pizza. It’s similar to a lasagna but easier to make.
Asparagus Soup – I love it when asparagus is in season, and this is one great way to eat it.
Bread Balls – These are dairy free and a fun addition to any meal.
Buckwheat Pancakes – Use pure buckwheat flour in these pancakes for a nice twist.
Almond Flour Pancakes – These pancakes are low-carb and very filling.
Lemon Bundt Cake – We love lemon desserts, and I like that bundt cakes only require a simple glaze on top.
Coconut Almond Stuffed Dates – I really love these little treats after dinner.
