This week’s gluten-free meal plan has some of my family’s favorite dinner recipes – baked macaroni and cheese, Mexican chili, and pizza casserole. You’ll also find plenty of other easy and tasty recipes that everyone will enjoy, whether they have to eat gluten free or not.
Baked Macaroni and Cheese – This is my mom’s recipe for a dish that my family absolutely loves. It’s more than just macaroni and cheese. It is smothered with a milk and egg mixture that surrounds and sometimes fills the macaroni and bakes into it. The result is a hearty dish with flavor and texture that is quite different than stove top mac and cheese.
Ground Beef and Broccoli – This stir fry type dish is simple but tasty. You’ll need fresh ginger, onions, garlic, mushrooms, and broccoli, along with ground beef and few other staple ingredients.
Baked Chicken Tenders – These chicken tenders are coated with egg and an almond and tapioca flour mixture, which keeps the chicken moist. This recipe is grain free and dairy free.
Slow Cooker Mexican Chili – This has been my go-to chili recipe for years. It’s made in part with refried beans, which makes it a thick chili. It also includes a jar of salsa, which adds nice flavor. I use mild salsa, but you can, of course, use what you like.
Tilapia with Tomatoes – With only five ingredients, this is a super easy but tasty recipe. You can substitute any light fish for the tilapia.
Pizza Casserole – This is a great way to enjoy the flavors of pizza. It’s similar to a lasagna but easier to make. If you don’t need a big dish full, try freezing the leftovers, or cut the recipe in half.
Asparagus Soup – I love it when asparagus is in season, and this is one great way to eat it.
Bread Balls – These bread balls are dairy free and a fun addition to any meal.
Buckwheat Pancakes – Use pure buckwheat flour (not a mix of buckwheat and wheat) in these pancakes for a nice twist. While buckwheat sounds like it would contain gluten, it doesn’t. Just be sure to look for a gluten-free source.
Almond Flour Pancakes – These pancakes are low-carb and very filling. You can use almond meal or almond flour.
Lemon Bundt Cake – We love lemon desserts, and I like that bundt cakes only require a simple glaze on top.
Coconut Almond Stuffed Dates – I really love these little treats to satisfy my sweet tooth.
