It’s April Fool’s Day, and I thought about telling you that I had gone back to eating gluten. But I don’t think I could really pull it off well, and I don’t think it would be funny! So here’s my usual weekly gluten-free meal plan with some delicious recipes, including my favorite soup that I’ve been making a lot of recently. My parents really enjoy it too as well as my sister and brother-in-law.
Main Dish
Chicken Parmesan – The coated chicken stays nice and moist in this recipe. I’ve made it for non-gf friends who really love it.
Taco Soup – While the weather is still cool, this is a delicious soup that my son especially enjoys.
Ground Beef Goulash – This is an easy stove top weeknight meal.
Slow Cooker Chicken & Brown Rice – Put everything in the slow cooker and forget about it for a while. Add some veggies at dinner time, and you have a great meal.
Salmon Chowder – My favorite soup that I mentioned above. Everyone I have ever served it to has said that it’s really good. So this is a must-try recipe. And there is even a link in the post where you can find wine pairing specifically for my recipe!
Pizza – My family has always loved this homemade gluten-free pizza crust. One son always tells me I should sell it. The recipe makes two thick crusts (rectangular baking sheet and round pizza pan) so you can feed the family and have leftovers. Or you can use the recipe for a single crust.
Sides
Ratatouille is one of my favorite vegetable dishes, and it makes the kitchen smell great too!
French Bread – When fresh and still warm (but not hot) from the oven, this bread will make you feel like you aren’t missing out on anything!
Breakfast
Baked Oatmeal – Before creating this meal plan I was just thinking about making some of this baked oatmeal for my family. You can put it together the night before and bake it in the morning. It’s also great for snacks.
Zucchini Quiche Muffins are a healthy, low-carb breakfast or snack option.
Dessert
Chocolate Covered Coconut and Peanut Butter Eggs – They take a little bit of time, but they’re pretty simple to make. Perfect for Easter or any day, they’re a delicious treat without a bunch of additives.
Peanut Butter Cup “Cheesecake” – Dairy-free and grain-free, this is a delicious dessert without refined sugar.
