Paleo Coconut Oil Fudge



  1. In a mixing bowl stir the melted coconut oil and cocoa powder until smooth and no lumps remain. 

  2. Add the raw honey, sea salt, vanilla extract, and stevia (if using). Use a mixer to combine all the ingredients until well incorporated. Taste and add more honey, stevia, or other sweetener if desired. You can also mix this in a food processor.

  3. Line a 9 x 5 inch loaf pan with parchment paper and pour mixture into pan, spreading evenly. 

  4. Chill in the freezer for at least 1 hour. Remove from the freezer and slice into squares.


  1. For some crunchiness, add finely chopped almonds on top of the fudge before chilling.
  2. Be sure to use raw honey which is much thicker than regular honey. It is also lighter in color.
  3. If the honey is cold, it can be pretty hard. It's important to get it completely mixed in. Heating it slightly helps, but if the mixture is too warm it separates as it cools and you end up with fudge that is sweet on the bottom and bitter on top. If that happens, place the fudge in a food processor and process to combine, then press back into the pan and chill again.
