This avocado chocolate pudding is delicious and passed the taste test of my entire family. When I told them there was an unusual ingredient in it, only one of them was able to identify avocado, and he did it based on texture, not taste (having had avocado in smoothies before).
There is some banana in this recipe, which you won’t find in most avocado pudding recipes. It does add a hint of banana flavor, but it also helps to keep the avocado from being overwhelming. I use pretty firm bananas for this for the sake of texture. If you need more sweetness, you can add additional maple syrup or whatever sweetener you like. Sugar would work, as well as coconut sugar, honey, or stevia.
This recipe makes a pretty large batch, but it’s easy to cut in half if you have fewer mouths to feed or are unsure about how you will like it. I’m pretty certain you will, though!
Avocado Chocolate Pudding
Yield 6 - 8
- 1 1/2 cups almond milk (or milk of choice)
- 2 ripe avocados
- 1 1/2 cups sliced firm banana
- 3/4 cup cocoa powder
- 3/4 cup maple syrup
- 1 Tablespoon vanilla extract
- Add everything to your blender and blend until smooth.
- Chill before serving.
I used my Blendtec blender for this. I have not tried it in a regular blender or food processor, but those would probably work. For a regular blender, you might want to cut the recipe in half. It might also help to mash the banana slices before adding them to the blender.
To dress up this dessert, you put this pudding in edible chocolate cups and sprinkle it with dehydrated strawberries.
