Mint Lemonade

One thing I have learned from this month’s create a gluten-free beverage challenge is that I need to improve my beverage photography!

I ended up buying mint at the grocery store so I could share this recipe with you all.  This is my mom’s recipe and I love it not only because it tastes great, but because it reminds me of being a kid.

We’ve always called this mint lemonade, but orange also makes an appearance.  I love the combination of flavors and find it very refreshing.

If you look at the picture closely, you will notice that the drink in the pitcher is darker than the drink in the glass.  That’s because the recipe actually makes a concentrate the needs to be diluted.

It is pretty sweet, but you could certainly experiment of alternative sweeteners and/or cut back the amount of sugar.  Just remember, that this does get diluted.

Recipe: Mint Lemonade Concentrate

Ingredients

  • 6 c. water
  • 3 c. fresh mint, lightly packed
  • 2 c. sugar
  • 3/4 c. orange juice (fresh or not from concentrate)
  • Juice of 6 lemons (1 c. + 2 Tb.)

Instructions

  1. Heat water to almost boiling.
  2. Remove from heat and add the mint. Cover and let steep for 1 hour.
  3. Strain and discard the mint.
  4. Add the sugar to the water and stir to dissolve.
  5. Add the orange juice and lemon juice and mix to combine.
  6. Refrigerate.
  7. To serve, dilute using 2 parts concentrate and 1 part water, or to taste.
