Last month I shared an Orange Almond Cake recipe from the Almond Board of California, and I promised another recipe and giveaway for you this month.

This one is just in time for Valentine’s Day.  These intense chocolate almond bites are lightly sweet and grain free.  If you or your loved one are watching your weight, you can enjoy a few of these as a nice treat without overindulging.

I made this quick and easy recipe one afternoon and took the above picture.  Then I offered them to my gluten-free son, and he couldn’t stop eating them!  I’m sure you’ll enjoy them too.

Intense Chocolate Almond Bites

Ingredients
  • 1 cup whole roasted almonds
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • ¼ cup honey
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 325º.
  2. Put the almonds, cocoa powder and salt in a food processor and grind until only small pieces of almond remain, about 2 minutes.
  3. Add in honey and vanilla extract and pulse for 30 seconds.
  4. Form into balls the size of a cherry and flatten down.
  5. Place on a Silpat mat or parchment lined cookie sheet for ease of cleanup (these do not spread, so feel free to put them close together).
  6. Cook for 9-11 minutes or until browning.
  7. The bites harden as they cool after baking.
  8. Makes 20 bites.

    The recipe sounds delicious, but I am sure I would have difficulty resisting eating all of them right out of the oven. I have a high metabolism and can eat high calorie, high fat and not gain weight. (I gain weight on low-fat diets tho). Lately, I have been eating way too much gluten and feel horrible, so I’m trying to get back to my gluten-free way of life. I found your site over the weekend and love it! I have not used almond flour and would love to try it by substituting in bread and cracker recipes. I went to the Almond Board’s site and they have a ton of gluten-free recipes. I used to eat a handful of almonds every day and my gut loved it, but I have gotten out of the habit somehow. I now know that almonds are a prebiotic and I’m going to get some today!     We have just begun cooking gluten free for my daughter. This comes just in time for Valentine’s Day baking. Cookies and Breads are the things my 10 year old misses the most as I haven’t figured out how to get the texture right yet. My children adore almonds so the trick will be getting them baked without my son eating the almonds before they become cookies. These look like they would be rich and have a good “mouth-feel” compared to the glutinous version.
