Gluten-Free Wednesdays buttonHappy Fall!  I don’t know about you, but this is my favorite time of year.  I love the cool weather and being able to turn my oven on again.  I enjoy getting back to baking and eating more casseroles and soups.

This carnival is a great resource for finding gluten-free recipes and other eating ideas.  I enjoy seeing what you all contribute each week and getting ideas from you.  Thanks for making this carnival a great resource.

    I’ve been eating a ton of apples lately, but your theme inspired me to prepare this apple oatmeal bake. I was about to be lazy and just spread peanut butter on apple slices, but then i wanted to add cinnamon on top, and then honey, and then I thought, I will just make a baked dish with everything I want in it. Turned out great thanks to Bob’s Red Mill GF oats. Has anyone with celiac disease had trouble with gluten free oats? I have noticed sometimes I feel bloated and uncomfortable after eating rice and oats. Maybe its just because I my body gets used to eating minimal carbs?

      Deanna, about 5% of celiacs cannot tolerate oats. Before giving up on them you may want to try a different brand of certified gluten-free oats such as Cream Hill Estates which is tested to 10 ppm gluten. Bob’s Red Mill is only tested to 20 ppm.

    Yes, autumn is delightful! It’s great sleeping weather and I also really enjoy autumn food. Cider, squash, brussel sprouts, kale, turnips…

    I added a quick recipe for an apple salad… it’s an easy way to dress up apples with just a few ingredients.

    I linked up a recipe for Bok Choy. If you’ve never had this veggie before, this recipe is a great place to start. I have yet to find anyone disappointed with it yet, even pick people :)

    Hi Linda, oh boy, all the apple goodness! I can’t believe I didn’t manage to create an apple recipe this month, but I’m grateful to you and everyone else who did. :-)

    I linked up the two recipes that are up for my Skillet Supper Series this week–Combination Fried Rice and Unprocessed Sloppy Joes. Both are favorites in our house. 😉

    great Apple recipe, with apples being in season and apple recipes being posted.

    In large baking/casserole dish, put sliced apples with apple pie filling ingredients.
    Mix in bowl – Gluten-free granola, brown sugar, a little GF flour, cinnamon, melted butter, and sprinkle over apple pie filling, bake at 350 for 1/2 hr. Serve warm, with vanilla ice cream if desire – delicious! Sorry I do not have exact amounts of ingredients in front of me now – let me know and I can get them later.
