  3. Thanks for featuring my potato recipe! This week I have a banana cookie recipe. We recently found out my son is indeed allergic to eggs (though he can tolerate them in baked goods) so I won’t participate in this month’s theme.

    This week I am sharing another cookie recipe- Gumdrop Cookies with Oatmeal and Coconut. My Mom used to make these Gumdrop cookies when I was a kid and I always loved them. I make them with less sugar than she did, so that’s even better! This recipe even kind of qualifies for this month’s theme because it has 1 and 1/2 eggs in it!
