    Happy Thanksgiving! I’m linking up the Gluten-Free, Vegan Thanksgiving menu that I planned for a recent presentation/meal at our local vegetarian group meeting. I had some help from the members in preparing the dishes and I’m pleased to say that everything turned out excellent!

    Happy Wednesday! Today I shared a couple of meatball appetizers: one for BBQ Meatballs and one for Sweet and Sour Meatballs. Both are really easy, low sodium versions of party foods people often buy at the store.

    I also shared an idea from this weekend: The boys decided that they wanted “noodles, just noodles,” so I made noodles out of sweet potatoes. They gobbled them up happily. (ha!) For the grown-ups, I tossed some of the noodles in warm olive oil with apples, almonds and baby kale from the garden.

    Sooo busy prepping for the big dinner tomorrow, but I’ve shared a stuffed acorn squash this week. I’m using the filling as my Thanksgiving stuffing, with some almond-flour herb bread for the bread cubes. Thanks for hosting, and happy Thanksgiving!!
