Gluten-Free Wednesdays 10-19-11

Gluten-Free Wednesdays button
Hi everyone!  Thanks for all your well wishes last week.  I have been battling anemia.  I never knew how exhausting it could be both physically and mentally.  I’m doing a bit better this week, and I’m looking forward seeing what everyone links up here today.

Monthly Theme:  October’s theme is squash recipes.  Because of how I’ve been feeling I haven’t made much progress with squash recipes.  I do have one simple recipe to share with you soon.  I tried a pumpkin bread that turned out edible, but it wasn’t notable.  I’ll be looking for squash recipes this week to highlight next week.

Last Week’s Highlights:

Maple Pumpkin Granola – Jenn Cuisine
Pumpkin Chocolate Chip Doughnuts – Premeditated Leftovers
Butternut Squash Black Bean Rancheros – Debbi Does Dinner
Quinoa Squash Salad – Wheat Free Meat Free
Pumpkin Buckle – Hanunyah’s Sweet Creations

My Submission:  This week’s recipe is a delicious quick bread.

I pray your health continues to improve! I am still on a doughnut kick and linked up 2 GF/DF doughnut recipes. Thank you for featuring my Pumpkin Chocolate Chip doughnuts.

Linda, I hope you soon feel better! I’ve had anemia before, also had B12 deficiency, and didn’t like either of them. So tired all the time….

Here’s an easy beef casserole that I’ve linked: GF Tamale Pie. I hope you like it.

Meanwhile, I think I’ll just go windowshop those lovely chocolate doughnut recipes I see up there.

Linda, I’m thinking of you and hoping to hear good news soon! I’ve linked up my latest recipe, which combines all my favorite things. 😉 Love the squash recipes!

Thanks so much for hosting, especially when you aren’t feeling well. I linked up my Butternut Squash and Apple Salad. It’s a cold salad, which is perfect loving Fall tastes despite our warm southern weather!

Mmm…that banana bread looks delicious! I can’t wait to try it. I linked up a post today containing 2 recipes for Pumpkin Scones. Recipe 1: Dairy, Egg, Peanut/Nut, & Soy-Free. Recipe 2: Gluten, Egg, Soy, Peanut/Nut, & Corn-Free. They turned out fantastic and were gone in 12 hours. I hope it’s enjoyed here! Thanks for the opportunity to share!

I hope you recover quickly from the anemia. I understand fatigue, both mental and physical as I struggle with fibromyalgia and it’s many symptoms. Feel better soon and keep on posting recipes. I love the variety you offer.

Thanks for linking up the squash salad. I must say I’m kind of pumpkin’d out already. Banana oatmeal bread sound just fine.

Thank you for hosting! I am not trying to be spammy with the comment, but I just wanted to forewarn everyone that my pumpkin pie spice and several of the recipes ARE GF, but several in my post (it’s a pumpkin recipe round-up) are not. I have noted the ones that ARE GF–and I am so excited to try them since my daughter is GF!

Linda, I hope you continue to feel better. It is not fun being tired. I have linked my pizza crust and pumpkin sauce recipe. Looks like a great round-up. Thanks for helping the gf community by hosting the carnival. Take care of you. Okay?
