If you’re planning ahead and thinking about Thanksgiving desserts, the pumpkin pie recipes are approved by gluten-free and gluten eaters alike. Even the dairy free version has been a favorite among my extended family. The pumpkin roll is also a hit, but I’ve not made it dairy free. If you’re looking for ways to incorporate pumpkin into your weekly menu, try the pumpkin waffles, muffins, or chili. The cookies, cake, and crispy rice treats are all great fall time treats for special holidays or any day.

Pumpkin, with its bright orange color, is high in beta carotene and contains other vitamins and antioxidants. Here are some pumpkin nutrition facts and health benefits of pumpkins.

Canned pumpkin works in all of these recipes, but I think that making your own pumpkin puree from fresh pie pumpkins gives the best flavor. You don’t want to use your Jack-O-Lantern pumpkin unless you are prepared to spend time reducing the amount of liquid. You will get the best flavor and consistency from pie pumpkins.

Other squash, such as butternut squash, can be used in most pumpkin recipes as well, if you want try something with a slightly different flavor. Just remember that you want the consistency to be a bout the same as canned pumpkin.

I’m excited for thanksgiving and even more excited to try a g-free pumpkin pie recipe! My favorite! The past few years I have just eaten the filling without the crust. It just isn’t the same! Thank you!
