Gluten-Free Menu Plan 6-2-13

June is here and hot weather along with it.  I do less cooking and make more simple meals in the summer, which means I have fewer warm weather recipes to share.  So I rounded up a few extra recipes from other bloggers for this month’s menu plan.

Weekly Gluten-Free Menu Plan


Grilled Mustard Crusted Pork Chops, Potato Salad, and Broccoli Slaw – This pork chop recipe is from The Happy Housewife.  Be sure the mustard you use is gluten free.

California Pilaf

California Pilaf and Spinach with Hazelnuts


Tacos – Be sure to use gluten-free corn taco shells, corn tortillas, or gluten-free flour tortillas.  If you can find them, Udi’s flour tortillas are great.

Pineapple Cinnamon Chicken (Slow Cooker), Rice, Grilled Asparagus – The slow cooker is a great way to cook year round.  To really keep the heat out of the house, put it outside or in your garage.

Scallop Scampi with Pasta and Steamed Broccoli – This scampi recipe from Eating Well sounds really good, but I haven’t tried it yet.


Porcupine Meatballs and Salad – This kid-friendly meatball recipe is from Shirley at gluten free easily.  It beats turning on the oven for pizza.

Hamburger Bun

Hamburgers in a Lettuce Wrap or on a Hamburger Bun, Veggies & Dip

I’m reading along looking at the photos thinking yum, yum, yum … and then, hey, that dish looks familiar … and then I think hmmm, I didn’t know Linda made Porcupine Meatballs.
