It’s Father’s Day tomorrow, and so the first item on this gluten-free menu includes instructions for how to cook filet mignon—my husband’s favorite steak. I hope you all enjoy the day.
This menu is gluten free but I also include dairy free and grain free options for those who need it.
Weekly Gluten-Free Menu Plan
Spaghetti and Meatballs with veggies and dip. Use instant potatoes in the meatballs to make them grain free and substitute zucchini noodles for the pasta.
Chicken Enchiladas and spinach salad. Use leftover chicken from the night before. Omit cheese or use Daiya substitute for dairy free. For grain free, use the chicken to make a taco salad.
Salmon Cakes with rice and steamed or grilled asparagus. Use instant potatoes to make the cakes grain free and omit the rice.
Cheeseburger Rice with veggies and hummus. This is not dairy or grain free at all. Instead, try hamburgers in a lettuce wrap.
Multi-Grain Waffles with fresh strawberries!
For a grain-free and dairy free dessert try Strawberry Rhubarb Topping made with arrowroot starch instead of corn starch on top of your favorite dairy-free ice cream.
