Many people have restrictions in addition to being gluten free. I know I do. I am also dairy free as well as mostly soy and grain free. I always cook gluten-free dinners, but they are not always dairy free or grain free. For that reason, I’m sharing what I do to accommodate those requirements for me. Hopefully it will help a few of you too.
Weekly Gluten-Free Menu Plan
Salisbury Steak with mashed potatoes and asparagus. In the steak recipe I use coconut aminos to avoid soy (if using soy sauce, make sure it’s gluten free) and instant potatoes to avoid grains. For the cream of mushroom soup recipe, I use arrowroot starch and almond milk.
Chicken Breasts with Garlic Sauce with oven fries and broccoli. For grain free, eliminate the coating or try using tapioca starch. Use arrowroot starch in the garlic sauce.
Ground Beef Goulash and salad. When cooking the ground beef, I keep some aside for myself and have it along with my salad.
Slow Cooker Pork Chops, rice, and green beans. I omit the rice for grain free.
Meatball Subs on gluten-free bread with salad. If you don’t want to buy gf rolls, try my French bread rolls. I make the subs with spaghetti sauce and mozzarella cheese. I simply eat meatballs with sauce to avoid grain and dairy.
(We often like breakfast for dinner.)
Coconut Pineapple Muffins with ham and fresh fruit.
