The other day I told you a little about my new diet. While the whole family is not eating the way I am, some of them are making adjustments. It certainly affects my dinner menu because I need to be able have at least part of the meal work for me.
My monthly gluten-free menu plan does not reflect my new diet and is not necessarily the plan I am following. You can still get a free copy of September’s menu and use it for the two weeks left in September.
Green Bean Scramble – My picky eater who is not fond of green beans likes them served this way. Toast would go well with this if you want additional carbs.
Chicken and Broccoli Stir Fry with Brown Rice – I ate the stir fry without the rice.
Ground Beef Ragout – This recipe is from a new cookbook authored by Carrie of Ginger Lemon Girl. I’ll be sharing more about the book on Tuesday.
Slow Cooker Herbed Chicken and Vegetables – I cooked additional veggies to go with this, and reheated leftover rice.
Zucchini Pizza – This is another low carb recipe that my family loves. My youngest particularly likes that he can enjoy eating pizza and get his veggies at the same time.
Spinach and Ham Frittata – I added chopped mushroom to this. People who wanted carbs grabbed some crackers or chips.
