Gluten-Fre Menu 7-22-12

It was very hot again last week.  I didn’t use my oven, but I did use the grill a good bit.

Salad with Taco Meat.  I had cooked and seasoned taco meat in the freezer which I thawed and reheated for everyone to put on top of salads.  It was a quick and easy meal that was perfect for a hot day.

Chicken and Broccoli Stir Fry with Rice.  Stir fry is a meal I like to cook in the summer because there are plenty of fresh vegetables available, and it doesn’t require heating up the oven.

Hamburgers and Corn on the Cob with Salad.  This meal was loaded with fresh farmer’s market vegetables when you consider that even the burgers included lettuce and tomato.

Salmon, Rice and Quinoa, Broccoli.  I baked the salmon in foil on the grill and made enough of everything to take a meal to a sick friend.  I also made chocolate covered strawberries for her.

London Broil, Green Beans, and Potato Chips.  I had thawed some London broil and had it marinating, but I was out doing errands and didn’t have much time to actually cook.  I threw the beef on the grill and steamed some fresh green beans.  For those who wanted more carbs, I simply opened a bag of potato chips.

Brown Rice Salad with Ham and Green Salad. I used precooked turkey ham, but be sure to read the label.
