Gluten-Free Menu 7-15-12

Since we bought a quarter of a grass fed cow, most weeks we have beef on Wednesdays and Thursdays, with one of those days being ground beef.  It’s simply easier if I only have to remember to take meat out of the freezer once.  It has worked well so far, and we are enjoying the beef.

Hot Dogs, Corn on the Cob, and Fresh Veggies.  I pulled a Kinnikinnick hotdog bun out of the freezer for my son, and I ate mine without bread.

I have been buying Applegate uncured beef hot dogs.  The ingredients are:  Beef, Water, Contains Less Than 2% Of The Following: Sea Salt, Paprika, Dehydrated Onion, Spices, Nutmeg Oil, Celery Powder.  Those are ingredients I can feel good about eating.

Spinach Salad topped with Bacon and served with Corn on the Cob.  There’s nothing like fresh summer foods.

Shredded Barbecue Chicken Sandwiches with Zucchini and Onions.  I cooked chicken thighs in my pressure cooker, shredded the meat, and added barbecue sauce.  Gluten-free son and I ate ours on Udi’s millet chia bread.  The zucchini and onions recipe is coming tomorrow.

Hamburgers and Salad.  Again, we used Udi’s bread for the burgers.

Slow Cooker Beef Brisket with Potatoes, Carrots & Onions, and Green Beans Almandine.
