Gluten-Free Menu 6-3-12


After looking over last week’s menu, I realized we ate a lot of potatoes!

Croc Pot Chicken & Mashed Potatoes – We spent Memorial Day weekend with my parents.  Mom cooked a whole chicken in her crock pot and I made dairy free mashed potatoes to go with it.

Salad with Chicken – Dad usually enjoys grilling, but he and my guys had a big project going on.  Being that it was a hot day, we had a big salad topped with leftover chicken.

Ham & Potato Frittata – Frittatas are quick and easy.  I cooked ham and potatoes in my cast iron skillet, then added beaten eggs.  I cooked it on low on the stove for a while, then put it in the oven and cooked it under the broiler.

Ham Loaf and French fries.  This time I mixed the ham loaf in my new food processor and liked the fine texture that resulted.

Roast Beef & Potatoes – Cooked in the crock pot.

Pizza (I double this recipe) – Our favorite Fright night meal.

I also made date balls and rhubarb coffee cake this week.

    Love to see more specifics on veg (people tend to like them more with adjectives and descriptors). Zucchini, for example, 17 million different things to do with it… which did you choose?
