Gluten-Fre Menu 6-17-12

If you’re looking for gluten-free menu ideas, here is what we ate last week.

Recently we purchased a quarter of a grass fed cow and had our first taste of it last week.  The meat is lean and flavorful.  The burgers were terrific and the roast was very tender.

Hamburgers – Gluten-free son and I had ours on Kinnikinnick buns.  We had salad with the burgers.

Grilled Chicken Sandwiches – Since there were hamburger buns to use from the night before, I grilled chicken and we ate it on buns and had steamed green beans with it.

Mexican Chili and Corn Bread.  I made a large batch of chili and took some to a sick friend whose son is on the specific carbohydrate diet.  We had salad with it.

Mexican Casserole and green beans.  I pulled some cooked chicken out of the freezer to use in this casserole.

Crock Pot Chuck Roast and Potatoes served with broccoli.

Pizza and Salad.  We used Kinnikinnick pizza crusts.

Fix Your Own Salad and Popcorn.  I let everyone make their own salad and provided protein options to go on it (including bacon).  An easy and fun summer meal.
