Last week’s meals were pretty quick and easy, but all were good. I hope the menu gives you a few ideas for this week.
Last week we purchased a quarter of an organic grass fed cow. The meat is all frozen, so I will need to do a little more advanced planning from now on.

Mini Corn Dog Muffins – This was a relaxed meal that people could eat when they wanted. Fresh veggies went with it.

Spaghetti – Once again I didn’t make meatballs, but used sausage as the meat. My kids love spaghetti with sausage.

Italian Sausage with Broccoli and Quinoa – I modified my Italian Sausage and Pasta recipe since we had pasta the night before. I used quinoa and omitted the olive oil. It turned out great.
Steak, French Fries, and Salad. I grilled the steaks and cooked the fries in an electric skillet for a quick meal that the family loved.

Pork Chops, Rice, and Zucchini with Walnuts. My picky eater still loves this zucchini recipe.
Pizza and Salad. I don’t know how much longer I’ll be willing to turn the oven on for our weekly pizza. I usually take a break from it in the summer. Our temperatures were moderate this week, so I thought I would make it while I still could.

those mini corn dog muffins look incredible! yummmm! thanks for sharing!
