Since I am sharing last week’s menu with you in hopes that it will help you plan your meals for this week, my menu starts with our Easter dinner. I also shared with you last week all that was on our Easter menu, and you’ll be seeing what we had for dessert tomorrow. The rest of the week looked like this:
Spaghetti – I didn’t make meatballs this time but used ground beef in the pasta sauce.
Crock Pot Chicken and Vegetables along with quinoa and broccoli. I cooked the quinoa in chicken broth and added the onions, celery, and carrots that cooked with the chicken to the quinoa after it was cooked. My family liked it that way.
Salisbury Steak with oven fries.
Tacos – It was a busy Friday evening for most of us and I needed something easy. I actually cooked the ground beef and added the taco seasoning the evening before when I was preparing the Salisbury steak.
I didn’t do much baking last week, but we had a lot of appetizer foods. I made a dairy free spinach dip, bacon wrapped dates, and a few date balls. One of my boys made guacamole.
